Jack Meatball Subs

Ingredients

  • 6 Classic Jack Meatballs from jack & annie’s
  • 1 cup marinara sauce
  • 2 sub rolls, sliced
  • 1 Cup shredded mozzarella
  • Parsley, freshly chopped
  • Vegetable oil

Directions

  1. Preheat oven to 350F. Place sliced bread on a baking sheet and brush with oil and toast for 3 minutes. Remove from oven.
  2. Heat 1 Tablespoon vegetable oil in a non-stick skillet over medium heat. Add Jack Meatballs and sauté for a few minutes to sear the outside. Lower the heat, add marinara and simmer for 10 minutes, stirring frequently.
  3. On the toasted rolls, divide the Jack Meatballs and spoon the extra sauce over them. Sprinkle mozzarella evenly on each. Place back in the oven and bake until cheese is melted, 5-7 minutes.
  4. Remove subs from the oven and sprinkle with freshly chopped parsley and more mozzarella if desired. Serve immediately.
