Jack Sausage and Date Skewers

Here’s a vegetarian appetizer sure to please a crowd! These jack sausage and date skewers are sweet, savory, and super-easy to throw together before your next event.

Ingredients

  • 1 package jack & annie’s Maple Breakfast Jack Sausage
  • 10 large medjool dates, pitted
  • ¼ Cup feta or goat cheese, crumbled
  • ¼ Cup pistachios, shelled
  • Honey
  • Cocktail picks or long toothpicks

Preparation

  1. Preheat the oven to 350 F. Arrange dates on a baking sheet lined with parchment paper. Bake until heated through, about 10 minutes.
  2. While the dates bake, heat a non-stick pan over medium heat. Add pistachios and toast for 1-2 minutes until golden brown and fragrant. Transfer to a cutting board and roughly chop.
  3. Turn heat to medium-low and add 1 Tablespoon vegetable oil to the pan. Add jack sausages and sauté for 6-8 minutes, turning regularly. Transfer to a cutting board and cut each sausage into thirds.
  4. Remove dates from the oven and cut into bite-size pieces. 
  5. Add a piece of sausage, a date and another piece of sausage to a cocktail pick. Repeat for remaining sausage and dates and assemble picks on a serving platter. 
  6. Top with a good drizzle of honey, crumbled cheese and toasted pistachios. Serve immediately.
